  • 2 medium potatoes, peeled and shredded

Step 1: Preparing the Potatoes

Peel the potatoes and shred them into thin strips using a knife or a mandoline slicer. Place the shredded potatoes in a bowl of water to prevent oxidation. Rinse the shreds under running water until the water runs clear, then drain and set aside.

Step 2: Mixing the Sauce

In a small bowl, mix together the vinegar, salt, sugar, soy sauce, and white pepper powder. Adjust the seasoning according to your preference. The sauce will provide the signature flavor to this dish.

Step 3: Stir-frying

Finally, sprinkle the sliced green onions over the top and give everything a quick toss. Remove from heat immediately and serve while hot.
